This is really just a suped up version of hamburger n' rice. I actually got the idea for this from a box of hamburger helper. It was good but I said, "I bet I could do it better." And hey!...   1. 1 lb ground beef
  2. 2 sticks chorizo sausage
  3. 2 cups white rice
  4. 4-6 mini sweet peppers, diced
  5. 1/2 yellow onion, diced
  6. 4 heaping tbsp Rotel diced tomatoes w/ green chilies
  7. 1 packet taco seasoning
  8. Salsa con queso, for garnish
  9. Chili cheese corn chips, for garnish

Steps to make a The Barrio Skillet

Cook 2 cups rice according to package directions. In a large skillet, Brown ground beef till half done then add the chorizo. Chorizo cooks pretty quick so the beef needs a little solo time. Finish cooking meat mixture. Drain fat.

Add the diced veggies to the meat and cook another 5 minutes or so to soften them up a bit. Add the diced tomatoes. There should be some liquid in the pan. If not, add a bit of water. Continue cooking and stirring while adding the taco seasoning until it's all heated through and the taco seasoning is dissolved and well blended.

Add your cooked rice to the skillet and mix well. Cover and keep low heat on it for a few minutes. Stir well again.

Serve in a bowl topped with the salsa con queso and corn chips or anything else you may want. Delicious dinner with some zazz!

In Argentina we have a multiple varieties of chimichurri sauces with different ingredients that people like to add to it. I will show you three of the varieties that i know and you can choose the type that you prefer to do. I usually use the classic chimichurri sauce. The basic ingredients that always come in any chimichurri sauce are: fresh italian parsley/flat leaf parsley, garlic, oregano, chopped red pepper, white pepper and salt.
