This is a combination of a couple different recipes, none of which had all I wanted. So I made my own to include everything I like. With veggies and turkey and chili goodness!

Ingredients and spices that need to be prepared to make Turkey & veggie chili:

  1. 1 zucchini, sliced
  2. 1 onion, diced
  3. 4-6 cloves garlic, minced
  4. 1 lb ground turkey
  5. 1 cup corn
  6. 2-3 handfuls spinach, chopped
  7. 1 jar (28 oz) crushed tomatoes
  8. 1 can black beans, drained & rinsed
  9. 1 can kidney beans, drained & rinsed
  10. 2 tbsp chili powder
  11. 2 tbsp cumin
  12. 2 tsp oregano
  13. to taste Salt & pepper
  14. Olive oil
  15. 1 avocado, diced
  16. to taste Shredded cheese
  17. pieces Tortilla chips, broken into small
  18. to taste Sour cream
  19. Chicken stock (optional)

Steps to make a Turkey & veggie chili

In a large pot, heat about 2-3 tbsp olive oil. Add onion and zucchini and cook until almost done.

Add chili powder, cumin and garlic, stir well and cook for just a couple minutes to release flavors.

Remove onion/zucchini mix and set aside. Add turkey to same pot and cook until browned.

Add onion/zucchini mixture back to pot. Add tomatoes, black beans, kidney beans, corn, spinach, oregano and salt & pepper. Stir well.

If chili doesn't look soupy enough (not enough liquid) add some chicken stock until desired consistency is reached. Note: be careful not to add too much as chili gets more soupy as it cooks.

Bring to a boil, then turn heat down to low, cover and cook for 20 minutes.

Top with shredded cheese, sour cream, avocado and tortilla chips.
