Add 2 tbs EVOO, ground turkey, garlic, salt & pepper to skillet. Saute until turkey is no longer pink about 5-7 min.

Add the ketchup, water, brown sugar, chili powder, dry mustard, tomatoes paste, Worcestershire and Tabasco sauce.

Stir to combine and bring to a simmer.

Simmer for about 5 min. until slightly thickened. Remove from heat.

In another skillet preheated to medium high heat, add the remaining tablespoon of EVOO, yellow onion, green pepper, salt & pepper.

Saute veggies until soft about 5 min. Remove from heat and set aside.

On a baking sheet, place 1 cup of the tortilla chips and 1 cup of the blue tortilla chips spread around.Top with half of the sloppy joe mixture followed by 1/2 c of each of mozzarella and cheddar cheeses.Repeat step with the remaining chips, sloppy joe and cheeses. Top with veggie mix.
