Quick and Easy Steak Quesadillas ~ Easily Gluten Free

I needed something quick, inexpensive, and tasty for dinner. I also didn’t want to make any of my main go-to meals. I found some Steak-umms on sale and the rest is some tasty history. I made these gluten free (watch your tortillas, shredded cheese, and choice of steak meat for gluten, if necessary.)

Steamed wotou (nonleven cornbread) 红薯🍠窝头

Steamed wotou (nonleven cornbread) 红薯🍠窝头

Steamed wotou is a staple food in northern part of China where sorghum and corn are the main crops. Traditionally wotou is made of sorghum flour and the texture and taste are quite rough. I have been modified this staple food to flatter modern taste buds by adding Asian yam and honey to make the bread sweet and moist. In order to digest whole grain well, I recommend to soak it overnight at room temperature with 2 Tsp yogurt as a starter.

Well, now it's made & served however, just makes a few wish they'd ate that stew LOL. But, once served they all liked it, except my boy, he likes nothing, so he ate something different.

FC BBQ Chicken Chopped Salad

FC BBQ Chicken Chopped Salad

Taking you back to the 90s again with this Fridge Cleanout BBQ Chicken Chopped Salad I made from whatever was in the fridge. Inspired by CPK, of course. ;) Again, this is whatever I had in the fridge, but if you have jicama, avocado, and black beans, which are all in the original recipe, you should definitely add those. The fresh lime is my addition, but it really enhances the dressing! (Forgot to include it in the pics. Oops!)
