Iron-Rich Spinach and Hijiki Salad

Iron-Rich Spinach and Hijiki Salad

I wanted to make a salad using two of my favorite foods, spinach and hijiki seaweed buds (me-hijiki), so I came up with this. You can use regular hijiki of course. I added the corn for some extra color. Please try it with your favorite vegetables. Drain any moisture from the spinach, hijiki seaweed and canned tuna before mixing them together. Adjust the amount of hijiki, corn, seasoning and ground sesame seeds to your taste. For 4 servings. Recipe by Meepurumura

Diet-Friendly Soy Milk Risotto with Tofu

Diet-Friendly Soy Milk Risotto with Tofu

I made this for myself when I wasn't feeling so good. I don't really want to cook anything elaborate just for just myself... That's how I came up with this recipe: using my stocked up tofu and soy milk to make an easy and healthy risotto. You can use ham or wiener sausages instead of bacon, add mushrooms, or even boiled asparagus instead of broccoli. Try mixing in all sorts of vegetables. It'd probably help sort out your fridge. Chinese Steamed Castella Cake

Chinese Steamed Castella Cake

No matter how much time passes, I will never forget the flavor of the steamed castella cake my mother used to make when I was a child. I tried so many times and finally found that flavor. It was so nostalgic and I was so happy that I almost cried over this cake. Make sure you let it rise enough! Then all you have to do is steam it. So easy! Recipe by Masako Bishoku

Apple Cardamom Pound Cake- low histamine, gluten free, dairy-free, vegan, corn free

Apple Cardamom Pound Cake- low histamine, gluten free, dairy-free, vegan, corn free

My baby boy wanted an apple cake for his birthday, and cardamom is more suitable for his low-histamine diet than cinnamon, so voilà! It is a pleasant autumn flavor that nods to the season almost upon us. The dense cake is full of juicy apple chunks and it is so enjoyable to eat warm with the sweet maple cream icing mixing with the vanilla frozen dessert. As for the decorations....my 4 year old wanted a space theme (obviously) but rejected the number 4 for a 100 atop his cake because that is his favorite number. My husband pointed out, however, that 100 still represents the number 4 in binary language. So, it works, I guess 😳! Tip: If you want the cake to retain the softness it comes out the oven with, seal in the moisture by covering every inch of it in the maple cream icing and leave at room temperature on the day of serving at a party. Since we are following a low histamine diet for health reasons, we throw the cake (what is left after immediately eating) into the freezer and nuke it in the microwave for 30 seconds when we want another serving.

Mixed Veggie Sabji (Stir Fried Veggies)

Mixed Veggie Sabji (Stir Fried Veggies)

-I was able to make a delicious Sabji that goes with curry using the vegetables that I had in my fridge. -I thought I could use a moderate amount of everyday oil and spices that are used in Indian cooking and easy on the stomach and large intestines. However, the more popular version is to use a smaller amount of spices since it's better for your health. -It's good even without Paneer -If you want to shorten the cooking time, then I recommend when cooking the carrot portion of the recipe, you can prep it by boiling it in a separate pot. -Rather than relying on the same vegetables, try making it with different ones. That is the purpose of this versatile recipe! Recipe by Plabar
