  3. 1 cup red onion, chopped

  8. 1 can (15 ounce) no salt-added black beans
  9. 1 cup water
  10. 1 cup bell pepper, chopped (any color)
  11. 1 cup zucchini, chopped
  12. 1 cup corn kernels
  13. 1 cup white mushrooms, chopped
  14. 1 cup cilantro, chopped
  15. 1/4 tsp cayenne pepper
  16. 1 salt & fresh ground pepper to taste

Steps to make a Summer Vegetarian Chili

Heat oil in medium pot. Add onion, garlic, chili powder and cumin. Saute over medium heat until onion is soft, about 5 minutes. Add remaining ingredients (except garnishes) and stir. Bring to a boil, then lower heat and simmer 20 minutes or until vegetables are soft. Add more liquid if needed.
