Heat enough olive oil to cover the bottom of a medium sized non-stick saute pan to medium heat.

Add chunks of sausage in bite sized pieces. Add peppers, potatoes, and onions. Season. Toss.

In a seperate bowl, whisk together eggs and milk with a pinch of salt and black pepper.

When sausage is 90% cooked, add crushed pepper flakes, corn, garlic, and ham. Cook for 30 seconds to a minute.

Add butter. Stir. Add eggs and cheddar. Stir.

Bake uncovered in a non-stick saute pan at 350° for approximately 15 min or until liquid is cooked.

All were BBQ'd, mixed, chopped, documented, presented and photographed by a tiny, adventurous, creative little 7 year old lassie named Lacy. However, one of my favorite baked bean recipes tonight included precooked shredded pork. But, bacon, side pork and pork fat works great in any baked bean dish! My hubby usually brings back few cans of beer from his office during chinese new year but we don't usually drink beer. So the beers are just sitting there in my kitchen cabinet. One day, someone posted in facebook that he roasted the chicken with beer. So I decided to try it out and wow... We LOVE it. The meat is super tender, juicy, the skin is crispy and the seasoning is just perfect. The roasted veggies are also very yummy. My youngest son even finished all the purple sweet potatoes (He dont usually like purple sweet potatoes). The kids love it, hubby loves it. This recipe will be used over and over again! In this recipe, I used tiger white beer (the one I had at home). Next time will probably use other type of beer. Not very sure whether the different type of beer will give different flavour to the roasted chicken, some people says it doesnt really matter. But will give it a try next time.
