  1. 200 grams Homemade hotcake mix (recipe D:180153)
  2. 100 grams Corn meal
  3. 2 Eggs
  4. 150 ml Milk
  5. 2 tbsp Vegetable oil

Steps to make a Corn Bread

Preheat the oven to 180°C. Place the cake mould on a baking sheet.

Break the eggs into a bowl and beat them. Add the milk and mix well.

Add the hotcake mix and corn meal to step ② and mix it together rougly with a spatula. Add the vegetable oil and mix lightly so as not to make the batter overly sticky.

Pour the batter in the cake pan and bake it for 25-30 minutes.

Every year in the summertime, we receive a lot of corn as gifts from acquaintances. But I'm not very fond of the texture of the corn kernels, so I always end up making corn potage soup with it. When corn is not in season, I use store bought corn paste instead of fresh corn, but the intensity of the color, flavor, and sweetness is just not the same!! Use corn as soon as possible after picking. Any more than 3 days after harvest, and the flavor is not so good anymore. What we do at my house is to at boil all the fresh corn cobs, wrap them in plastic wrap and put them in the refrigerator. Alternatively you can remove the kernels and freeze. My family and I are huge steak lovers and we are lovers of Mexican cuisine. So we have tried to meld 2 of our loves together with this Mexican Steak dish. The steak has a Mexican rub with a few more aromatics added to it. It is cooked like a fine dining steak with the butter basting with a few different herbs and spices added to kick up the Mexican flavor of the dish. I added 2 sauces: mango habanero and a chili sauce, and it has chorizo potatoes, chili corn, and a jicama & fennel slaw for the sides. There is a lot of things going on in the plate so the ingredients and steps are quite a bit but the taste makes it all worth it at the end.
