Solterito | Corn Salad

This is very popular dish of the Peruvian cuisine. Originally from Arequipa, a gorgeous city surrounded by mountains in southern Peru. Solterito is a vegetable salad that is served cold. It is a great appetizer for summer, however Latin American people eat it in every season. The main elements of this dish are corn kernel (choclo), white cheese, lima beans, and broad beans. These are essential ingredients in the Peruvian gastronomy that grow well in Peru. An interesting fun fact is that the wors "solterito" means "single". This makes a nice, meatless meal option. Most of the time spent making it is hands off while the potatoes bake up. If you want your skins to be super crispy, then once you hollow them out, brush them with more oil and return them to the oven for a few minutes before filling them.

Flautas

These are like taquitos but baked not fried. I used large flour tortillas, you can easily use corn or smaller size as you prefer. I prefer to make then filling one day then baked flautas as i eat them all week. Can also bake all then reheat the leftovers or eat cold. Do not advise to freeze after cooking. Suggest to serve with guacamole or salsa and yellow rice or citrus cabbage slaw. Great with beers or margs!!
